And you aren't just having problems from being 6'8?
Man, I sat in a stock Hachiroku (well, a non-running Levin Coupe) and I was too tall (5"10~11) with the seat all the way back to be in a position that would allow easy H&T... although I forgot to see if there was a tilt steering wheel.
A bucket seat and a smaller steering wheel would have fixed it though.

Alas i know the pain you feel when you are trying to Heel Toe it.
I ware a size 13-14 and the way my pedals at set up there isn't much room to heel toe.
The method i found best effective is to toe toe it.
Using your Big toe to brake and your little toe to gas it.
If your feet are atleast half as wide as they are long you shouldn't have a problem trying the Toe Toe method.

I feel your pain with the big shoes. I wear size 13's as well and it's hard to move those puppies down there. You may want to consider getting smaller shoes. I don't mean a smaller shoe size, rather a shoe that isn't large and bulky. I find it hard to drive a stick-shift when I wear my basketball shoes or my hiking boots, but much easier when I wear my Puma Speedcats or my Adidas Superstars. Those shoes are quite smaller than the bulkier ones, and it should make it easier to move your feet.

KangaROOS (shoes) also work pretty good.

Using your Heel for the brake and toe for the gas?
I have tried that (it does work) but it was a little weird and not to comfortable.
